Chicken Croques Monsieur with Smoked Butter
For two sandwiches:
- 4 slices bread, crust removed
- 60 gram / 2 1/8 oz. smoked salted butter
- 1 cooked chicken breast
- 1 ball mozzarella cheese
- 4 semi-preserved tomato halves
- 4 sprigs flat (Italian) parsley
- Freshly ground pepper
Preparation
Toast the bread on one side only and butter with half of the smoked butter.
Melt the rest of the butter.
Slice the chicken breast into thin strips. Drain the mozzarella cheese and slice.
Cut the tomatoes into thin strips.
Remove the leaves from the parsley and chop.
Brush the bread on the side that is not toasted with the butter.
Place half of the mozzarella slices on two slices of bread on the toasted side, then cover with the chicken strips and chopped parsley. Salt, pepper and finish by adding the rest of the mozzarella to cover.
Place into a hot croque monsieur or other grill and let cook.
Presentation
Cut the croques monsieur diagonally and serve with a simple lettuce / green salad.
